Fromage Derrier Poisson:
1 medium gutted salmon or one large salmon tail, filleted
stuff with the following:
shitaake, oyster, and other expensive mushrooms
a combination of a hard, nutty cheese (like Raclette) and a softer, aromatic cheese
full sprigs of fresh herbs (rosemary especially)
some breadcrumbs
roast surrounded by chopped root vegetables and zuchinni
